This 15 minute rice was one of the first sides I ever learnt how to make as a child. I think it was my mother who taught me. Growing up, my family didn't have a lot of money. My amazing single mother worked three jobs to provide for my three sisters and I. Thinking back now, it was a blessing in disguise. We learnt how to cook using simple 'staples' and turned them into tasty dishes.
Fast forward to my life now and being a mother. This 15 minute rice, using the absorption method was one of the first sides I taught my son how to make when he was 6 years old. It was a great introduction to showing him how many amazing meals could be cooked on the stovetop. The absorption method fascinated him!
The beauty of this rice is that I have cooked it using an oven, a BBQ and even when camping. Its flavoursome and quicker than a rice cooker (my one at least).
When I want an extra kick...I have added a teaspoon or two of a commercial rub. Some of my favourites are Code 3 Spices, Barbecue Mafia, Pit Brothers BBQ, and Caribeque. They all make great rubs!
Give this rice a try! Oh and be sure to make extra, so you can turn it into fried rice the next day.
Ingredients
2 cups rice
4 cups water
2-3 teaspoons chicken stock powder (I use Massel stock powder)
2 tablespoons of olive oil
Method
Step one - Heat oil. Add rice and stock powder.
Step two - Sauté the rice for 2 - 3 minutes on low/medium heat.
Step three - Add water and bring to a simmer.
Step four - Reduce heat to the lowest setting possible and put the lid on your saucepan.
Step five - Set your timer for 15 minutes.
Your tasty fluffy rice will be ready in 15 minutes. If you have time, allow the rice to set slightly for 10 minutes with the lid on before serving.
Make extra so you can make fried rice the next day.
Serve it with your favourite grilled meat.
