This dressing is amazing on all salads and proteins such as seafood, chicken, beef and lamb. If you don’t like your dressings spicy, leave the chilli out.
1 teaspoon caster sugar
3 tablespoons rice wine vinegar
1 long fresh red chilli, deseeded and finely chopped
1/2 cup olive oil
1/4 cup lime juice
2 teaspoons ginger paste
2 teaspoons garlic paste
Salt and pepper to taste
Prepare the dressing by combining sugar, rice wine vinegar, red chilli, olive oil, lime juice, ginger paste, garlic paste, salt and pepper. Set aside until needed.
