My version of funnel cakes cooked outdoors using my Ziegler and Brown Triple Grill from Barbeques Galore are delicious! You can enjoy these for breakfast or dessert any time of the year. Think of pancakes but even better because they’re crispy and fluffy all at once. I first had funnel cakes at Disneyland in California and whilst I would love to be there a few times a year, sadly it’s just not a reality. I whip up a batch of these all year round and the whole family is happy!
Ingredients
2 cups of all-purpose flour
2 cups of milk
1 cup of water
1 egg
1 tsp vanilla extract
Pinch of salt
To serve - melted butter cinnamon, confectioners’ sugar (icing sugar), melted chocolate and ice cream.
Method
- Whisk the flour, milk, water, egg, vanilla extract and salt until smooth.
- Use a trivet on the BBQ and place a saucepan of oil, heated to 375f (190c).
- Add the mixture to a funnel or piping bag (with a 1/2 inch opening)and drizzle the batter in a circular motion until you see a lattice pattern.
- Cook until golden brown and then drain them on paper towel.
- Serve them warm melted butter, dusted with cinnamon, confectioners’ sugar, melted chocolate and ice cream.
- You can make them as big as you like. My recipe will make around 6 servings.
