Grilled Lamb Souvlaki with Wasabi Tzatziki

Lamb souvlaki is one of my favourite meals to cook midweek but on a Sunday when I'm having a slow day in, they're even better! I prepare the Greek salad in the morning and if I have time I marinate the lamb so it's ready for to throw on the grill at night. I can have dinner on the table in 20 minutes! 

Grilling the lamb skewers only takes 8-10 minutes and my Wasabi Tzatziki can be made 5 days ahead and kept in the fridge!  See my recipe below and give them a try! I grilled these lamb skewers on the  Ziegler & Brown Triple Grill

My Recipe for Lamb Souvlaki

Serves 4

  • 2 large lamb backstraps
  • 4 large pita breads (Greek or Lebanese pita)
  • Wasabi Tzatziki
  • Greek Salad


  • 1/4 cup olive oil
  • 2 minced garlic cloves
  • 3 teaspoons of dried oregano (oregano can be substituted using dried rosemary)
  • 2 teaspoons dried thyme
  • Juice of 1/2 a lemon (I like to use the other half right before serving).
  • Season with salt/pepper
Quick Wasabi Tzatziki Recipe 
  • 1 Cup of Greek Style Yoghurt
  • 2 teaspoons store bought wasabi cream
  • 1 Lebanese cucumber deseeded & grated
  • 1 garlic clove minced 
  • 1 Tablespoon of lemon juice
  • 1 Tablespoon of Extra Virgin Olive oil

(I add chopped dill when I have it)  


Step one: Mix together all the ingredients for the marinade in a bowl and set aside.

Step two: Cut the lamb backstraps in half (long ways) and then in cubes. I try and cut the cubes the same size so they cook evenly.

Step three: Add the marinade to the lamb and marinate in the fridge for 12 hours. (If you're in a hurry leave for at least 20 minutes)

Step four:Mix all the ingredients for the Wasabi Tzatziki in a bowl and place in the fridge until needed.

Step five: Thread the lamb cubes on the skewers (I do this right before I grill them). Preheat your grill - medium/high.

Step six: Grill the skewers for 8-10 minutes in total, turning frequently.

Step seven: Remove from grill and cover with foil for 2 minutes.

Step eight - Place the Wasabi Tzatziki on the pita bread (about 1 tablespoon) and then some salad.

Step nine: Add the 1 lamb skewer per pita bread.


Serve with hot chips/fries. 

You can give the pita bread a quick grill for 1-2 minutes if you prefer them warm.

If you have time and want to take your lamb souvlaki to the next level, try making your own pita bread. I love making my own! There's nothing quite like fresh hot pita bread and my advice is to make extra as you'll want to eat more than you thought and they freeze well.

Here's my recipe for pita bread - 

My Greek Pita Recipe

  • 2 Cups Warm Water
  • 2 Teaspoons dry yeast 
  • 3 cups all-purpose (Bakers) flour
  • 2 teaspoons pink salt
  • 1 Tablespoon olive oil 

Step one- Mix all ingredients in a bowl. Using a mix master (or your hands) kneed the dough for 5-10 mins. If sticky add a little more flour until smooth.

Step two - Let it rise in an oiled bowl covered with cling wrap for at least an hour. 

Step three - Make into rounds balls.

Step four - Flatten out thinner than you prefer as they will puff up when cooked.

Step five -  Cook on medium heat in a frying pan for 2-3 min each side or until slightly browned. You can use cooking spray.

Lamb Souvlaki is an anytime meal....which means it can be served for lunch or dinner! Also, how many meals can you whip up so quickly that have all the food groups?!
