Spice up your weekly menu with my Spicy BBQ Piri Piri Chicken. I like to make slits in the thickest part of chicken drumsticks, so my marinade penetrates through the meat and they cook more evenly on the BBQ. This is a perfect recipe for lovers of spice!
Ingredients
6 Chicken pieces (I used drumsticks)
6 Birdseye chillies with seeds, chopped (remove the seeds if you don’t want it hot!)
1/2 cup olive oil
1tbs lime juice
1/2 cup apple cider vinegar
2 garlic cloves, crushed
1tsp salt
2 tbs olive oil
Method
Combine chillies, salt, olive oil, vinegar and garlic in a jar. Shake to combine and set aside until needed. The marinade can be made ahead of time.
Score the chicken so it cooks evenly.Pour mixture over chicken. Marinate for a minimum of 2 hours in the fridge.
Cook over a medium heat BBQ for around 45 mins, turning frequently and baste with olive oil. Serve hot or cold in a salad.
