Roast Beef With Red Wine Marinade

This is my red wine marinade recipe featuring Yering Station Shiraz Viognier. As featured by Yering Station. Yering Station is Yarra Valley's first vineyard, located in the 'heart' of the Yarra Valley, only one hour’s drive from Melbourne.

Roast Beef with Wine Marinade

Hands up if you love wine? One of my favourite recipes that I've created would have to be my Australian Beef with Yering Station Shiraz Viognier Red Wine Marinade. This marinade works for beef, lamb or venison; for my recipe, I have used sirloin beef.

RED WINE MARINADE RECIPE

2 Cups Shiraz Red Wine
1/2 Cup of Extra Virgin Olive Oil
1 (generous) Tablespoon of Seeded Mustard (or you can use Dijon if you prefer)
1 Teaspoon Dried Oregano
1 Teaspoon Dried Thyme
2 Garlic Cloves Crushed
1/2 Teaspoon Pink Salt
1/2 Teaspoon Cracked Pepper

Method

Step one - Whisk all ingredients together.

Step two - Place meat in an airtight container and cover the meat with the marinade.

Marinate for at least 20 minutes or up to 4 hours.

Any leftover marinade can be used as a zesty reduction in a pan, to be used as a sauce. Just add a tablespoon of brown sugar and simmer for at least 10 mins, stirring lots!

Note - The beef pictured weighed 1.3 kg (2.8 pounds) and I cooked it indirectly using Firebrand BBQ lump charcoal.

For my marinade recipe, I used Yering Station 2015 Shiraz Viognier – but you can use any of your favourite Yering Shiraz wines.
