This saucy, delicious and classic Shakshuka dish is such a favourite brunch meal in my family. It's so easy to make indoors and even easier outdoors (I started making it when we used to go camping a lot). Ingredients
2 tbsp extra virgin olive oil
1 medium Spanish onion (150g), chopped finely
3 cloves garlic, crushed
2 tsp ground cumin
1 tbsp ground smoked paprika
800g canned tomatoes
½ tsp salt
½ tsp sugar
4 eggs
1 tbsp chopped parsley
Serve with toasted bread
Method
Replace the Ziggy centre burner with the trivet and set burner to low/medium heat.
Heat oil in the carbon steel pan and add chopped onion, stirring until soft. Add the garlic and spices and stir for 30 seconds.
Add canned tomatoes, salt, sugar and simmer for 5 minutes or until the sauce thickens.
Make four indents in the sauce and carefully break an egg into each one. Cook for 4-5 minutes or until egg whites are set and yolks are cooked to your liking.
Sprinkle with chopped parsley and serve with toasted bread.
