Grilled chicken thighs are easy, quick and delicious to grill. I found the trick to keeping them even more juicy is basting them as they cook with a 50/50 olive oil and lemon juice mix. Try my easy recipe below.
Grilled Chicken Thighs Recipe
Ingredients
8 chicken thighs
1/4 cup olive oil
2 teaspoons onion powder
2 teaspoons garlic powder
2 teaspoons dried thyme
Salt/pepper
Method
Step one - Combine the dry ingredients in a bowl and set aside.
Step two - Place the chicken thighs into a large bowl and coat with the oil. Refrigerate for at least 1 hour or overnight.
Step three - Set up a charcoal BBQ for indirect grilling and cook the chicken thighs directly over the heat for 6-8 minutes a side. Move the thighs to the indirect side when they’re ready.
Serve immediately with a squeeze of fresh lemon juice.
Notes
- Baste the chicken whilst it’s on the grill with a mix of lemon juice/water to keep it super juicy!
- Chicken needs to read an internal temperature of 165c (73c) before it’s taken off the grill.
- This method can be used on any gas or charcoal BBQ.
