Grilled Pork Chops And Apple Sauce

Pork chops are easy to grill and make for a scrumptious dinner. Served with my quick apple sauce, you have a match made in heaven. Choose thick chops with the bone in to keep them moist and tasty using my quick dry brining technique. Here's a recipe you can try using an indirect charcoal set up and any brand kettle style BBQ. The charcoal imparts an amazing flavour to the pork but yes, you can also use a gas BBQ for my recipe.

Pork Chops with Homemade Apple Sauce

Serves 4

Set up your kettle style BBQ for indirect charcoal cooking. You'll be able to move your pork chops across from the direct heat to the indirect side if you get any flare ups. See my Methods and Techniques for more about indirect charcoal cooking.

Dry Brining - I like to dry brine my pork chops because it's quick, helps form a nice crust, breaks down the muscle protein and more importantly retains moisture for a juicier pork chop.

How To Dry Brine

It's a simple technique of sprinkling sea salt over your pork chop, covering it and refrigerating it for at least 3 hours or ideally overnight.

Remove excess salt and allow the pork to reach room temperature prior to cooking.

Ingredients

4 Pork bone in rib chops
1 tablespoon of sea salt
Enough olive oil to brush the pork prior and whilst cooking
My Come Grill With Me Rub or any commercially available rub

Method

Set up charcoal BBQ for indirect cooking. If using a gas grill, you'll need a medium/high heat.

Grill the pork chops directly over the charcoal for around 3-4 minutes a side, turning when needed.

Move to the indirect side of your BBQ to continue cooking until ready which will be around 3-4 minutes more on each side, depending on thickness.

Rest for approximately 5 minutes before serving.

Note - The internal temperature of pork will reach 60c (135f) when ready to remove from the BBQ.

Apple Sauce Recipe

This is a super quick apple sauce you can cook on using a BBQ or on the stove top. I created it when I used to go camping with my family. We haven't been in ages but I still make this apple sauce in my backyard before I start grilling pork chops for dinner. It's super easy!

Ingredients

3 Green Apples peeled and diced
1/2 cup of water
30 grams of butter
1 tablespoon of brown sugar
1 cinnamon stick.

Method

Add all ingredients into your skillet (or saucepan on the stove) over direct heat.

Simmer for 20-25 minutes, stirring frequently.

Once apples have softened, remove the cinnamon stick and mash the apples.

You now have a quick and delicious apple sauce to serve with your pork chops.
