It's true that nothing beats a freshly shucked oyster but cooking them over fire adds another delicious element. Oysters can be cooked over charcoal or on a gas BBQ and even in your indoor oven grill. They only take 2-3 minutes to cook and will wow your guests at your next family event. With Christmas just around the corner, I suggest serving them on pink salt like I have below.
Which Oysters to use?
In Australia, the most common oysters are Sydney Rock Oysters (from NSW), Coffin Bay Pacific Oysters (SA) and St Helens (TAS). They're all delicious and range from tasty to creamy and silky in texture. We have incredible oyster farmers in Australia who work hard to provide us with the best oysters in the world. Which ever oyster you choose, you'll know it's fresh when it's slightly salty and tastes like the sea.
I have been grilling oysters for many years and enjoy them cooked just as much as eating them raw with a squeeze of lemon juice. When I'm hosting family or friends or cooking at an event, my Oysters Kilpatrick are always the perfect starter. Here's the recipe -
Oysters Kilpatrick
Ingredients
1 x Dozen Fresh Oysters
4 x Short Bacon Rashers
2 x Tablespoons Worcestershire Sauce
1 x Teaspoon Extra Virgin Olive Oil
Method
Preheat your BBQ for direct grilling.
Step One - Dice your bacon and lightly fry in oil until slightly crisp. Put aside.
Step Two - Mix fried bacon, Worcestershire sauce and olive oil in a bowl.
Step Three - Spoon a teaspoon of the mixture on each oyster. Top with chopped chives, parsley or coriander.
Step Four - Place oysters over direct heat (charcoal or on a gas grill) and cook for approximately 2-3 minutes.
Serve immediately.
Variations - You can add finely diced chillies or Tabasco sauce for an extra spicy kick.
