Seafood Spaghetti

Recently, I posted my Grilled Seafood Spaghetti on my Instagram page @come.grill.with.me and received lots of messages with requests for the recipe. Here it is! You'll see how easy it is and that even left over seafood can be used. I've also used chicken tenderloins in place of seafood in the past and it turned out just as delicious.

Lately work has been busy and whilst I love it, I've found by the time I get home in the evenings I'm exhausted. Cooking outdoors is my way of unwinding and de-stressing but lets be honest, it's cold here in Melbourne (after all it is Winter!) and a quick meal cooked in the backyard is a good one. This dish can be ready within 15-20 minutes and only half that time is spent outdoors! Feel free to cook the seafood in a cast iron skillet indoors if you haven't got access to a BBQ. I use a BBQ because I love the char grilled flavour it adds to the dish.

In this recipe, I have used Little Giant Pinot Gris white wine. It is hand-crafted and made with minimal additions and preservatives. I absolutely love this white wine with it's inviting bouquet of apricot, fresh pear, lemon pith and white floral aromas. It's fresh, fruity and crisp to drink and I will only cook with wine that I enjoy drinking which makes this a perfect wine to pair with my seafood recipes. This is my favourite Pinot Gris and one I will continue to buy for many years to come. Available at most liquor stores in Australia at a very reasonable price. If you haven't already, give this one a try. You'll love it!

Seafood Spaghetti Recipe

Serves 4

Ingredients

500 grams (about 1 pound) dried pasta of choice
1 kilo raw seafood (can be a mix of prawns, baby octopus, fish and scallops)
2 tablespoons olive oil
2 tablespoons cold butter, chopped
1 garlic clove, minced
2 tablespoons lemon juice
1 cup white wine (I used Little Giant Pinot Gris white wine)
2 tablespoons fresh parsley, finely chopped
Salt and freshly cracked pepper to taste

Method
  1. Preheat BBQ to medium/high and prepare for direct grilling. Grill seafood until opaque throughout and place aside (keeping warm).
  2. Cook pasta until al dente in slightly salted boiling water.
  3. Using a cast iron skillet, add olive oil and butter until melted. Then add wine until reduced by nearly half and garlic.
  4. Add grilled seafood, pasta, lemon juice and chopped parsley. Then toss until well combined. Serve immediately.

Optional - Add chopped fresh chillies for a spicy kick.

Seafood cooking times:

Prawns - 2-3 minutes a side
Scallops - 2-3 minutes a side
Baby Octopus - 2-3 minutes a side ( large octopus requires longer cooking time, don't use it for this dish)
Fish of choice - 4 minutes a side
