Thai Crab Fried Rice

Thai crab fried rice would have to be the easiest and most yummiest side I make. I first tried Thai crab fried rice in a tiny Thai restaurant in New York many years ago. I've loved it ever since and created my own recipe that I make often.

For this recipe, I use one of my hot carbon steel woks and get it nice and hot. The hero of this side dish (I often have it as a main too ) is the Fraser Isle Spanner Crab. Beautiful crab meat that's so sweet and succulent. Harvested by a hard working Australian fishery family that I know. I don't think Australian Spanner Crabs are given the recognition or appreciation they deserve. They're by far my favourite crab to eat.

My Thai Crab Fried Rice

Ingredients

150 grams Raw Fraser Isle Spanner Crab Meat (crab can be substituted for any kind but I prefer Spanner Crab for the sweetness)
4 cups cooked steamed rice (needs to be cold)
2 tablespoons peanut oil (any oil with a high smoke point can be used)
2 minced garlic cloves
1 tablespoon fish sauce
2 eggs
3 chopped spring onions
1 small finely chopped Spanish onion
1 mild red long chopped chilli
1 tablespoon sesame oil (this is essential for an amazing authentic fried rice flavour)
2 tablespoons Soy Sauce
1 teaspoon ground white pepper
1 cup chopped fresh coriander

Method

Be prepared to mix fast over high heat. Having ingredients chopped and read is a must!

Step one
Heat a wok on medium to high heat and add peanut oil.

Step two
Add Spanish onion, garlic, chilli stirring constantly until slightly brown.

Step three
Add rice and cook for a minute. Move rice slightly to the side and add sesame oil to the centre before cracking the eggs. Eggs needs to be mixed and scrambled into small pieces.

Step four
Add raw Fraser Isle Spanner Crab Meat and continue to mix over medium to high heat for 30 seconds. The crab doesn't need long to cook.

Step five
Add fish sauce, white pepper, soy sauce and chopped spring onions. Mix fast for 30 seconds before removing from heat.

Serve rice hot or cold topped with the fresh chopped coriander.
