This salad is absolutely delicious and always a crowd pleaser to serve as a side. It can also be prepared ahead of time and eaten cold or warm. I use the Ziggy Elite Twin or Triple BBQ from Barbeques Galore.
Ingredients
1 large zucchini (around 300g)
1 400g can mixed beans
1 handful fresh spinach
1 cup fresh parsley
1/2 cup fresh dill
1/2 cup fresh mint
1-2 cloves garlic
1 tbs balsamic vinegar
1 tbs extra virgin olive oil
1 pinch of sea salt
1/2 tsp pepper
1 lemon, juiced
1/2 tsp ground paprika
1/2 tsp ground cumin
1 tbs Greek yogurt
Method
- Rinse and drain canned beans.
- Wash and pat dry the zucchini. Cut 1/4 inch off each end. Chop the zucchini in rounds and then half moons, no thicker than 1/2 inch.
- Preheat and prepare a BBQ for direct grilling and cook the zucchini for 3-5 minutes, turning frequently. Remove pieces from the grill grate and put aside until needed.
- Chop all the fresh herbs and garlic.
- In a bowl - add the beans, fresh herbs, grilled zucchini, spinach, chopped garlic, balsamic vinegar, extra virgin olive oil and the juice of 1 lemon.
- Add 1 tbs Greek yogurt to the centre of the salad. Then sprinkle ground paprika and cumin. Mix and serve.
