The last few years, bone marrow has become 'popular' again. I have found some butchers around Melbourne selling the femur bones anywhere from $2 to $15 a bone! I once needed 5 bones cut in half for a dinner party and it cost me $75! If you can find them cheap, buy and freeze them for your next BBQ or dinner party.
I love serving Grilled Bone Marrow next to big steaks or even on their own with some toasted sourdough bread.
I don't usually monitor the temperature of my BBQ when grilling bone marrow. I simply add a chimney full of charcoal to one side of my BBQ and as soon as its ready (usually in 15-20 minutes) I start cooking.
If you do like to monitor the temperature of your grill, make sure your BBQ reaches around 275f.
If you are using a gas grill, preheat your grill (medium/high). You'll get the same result except for the added flavour charcoal imparts. Still delicious though!
My Grilled Bone Marrow Recipe
Ingredients
2 bones split length ways (I ask my butcher for long femur beef bones as they contain the most marrow)
2 Tablespoons olive oil (to brush the marrow bones)
Method
Step One - Drizzle olive oil on the entire bone (back and front).
Step Two - Season the bones with a little salt.
Step Three - Give them a quick sear (a few seconds) over direct heat then set aside to cook indirectly for around 15 - 20 minutes or until cooked. If your BBQ has a lid, use it but these can be grilled without a lid too.
Notes
The internal temperature of marrow will be 200f when ready to eat. Yes, until you're confident grilling them, use a thermometer!
I like to toast some sourdough bread (brushed with olive oil) on the grill at the same time to serve with the bone marrow.
